Sorry for delays, work's had the better of me this week.
The Weapon Groups are as divided up in the Gear and Equipment section, yes.
You'll also have several options in terms of where to make use of levels when gaining them. As an aasimar, your character will have the option of a celestial bloodline (trading in levels over time for additional abilities outside those normally granted by race/class/etc.). Racial paragon levels and prestige classes might also present some desirable options.
In addition to the Paladin class, you have the liberty of picking another class to fuse together with it. The resulting gestalt class will determine your hit die, skill points, feats, abilities, and saving throws based on the best values of each.

He's from Oerth, he's a Paladin, and he's going to (hopefully!) work for the Harmonium. St. Cuthbert all the way!
What is St. Cuthbert's favored weapon? I would assume it's the cudgel (club? mace?), but I don't know if he's "different" in Planescape.

Same deity, down to his socks. Any club or heavy mace qualifies as a favored weapon. The faction's most popular weapon selections are polearms and exotic weapons (for the mancatcher), and heavy blades (the officer's sidearm), but you needn't limit yourself to them.
He'll start at 3rd level.
Genealogy should be taken into account in these earliest levels. If the character is the direct child of a celestial and an aasimar born of the same celestial race, one of your first three levels should go to a major bloodline.

How about this as a basic background outline: Born in Furyondy, the son of an Aasimar Priestess of Cuthbert and an Astral Deva under these circumstances: A Half Orc Priest of Iuz summoned demons to aid the Iuz's humanoids' efforts in CY 583 at the Battle of Critwall Bridge. Ardenfyr's mother, a high-ranking priestess of Cuthbert, prays for aid to battle the infernal forces. An Astral Deva is sent. He helps with the Furyondian victory that day. That night, impressed by her devotion, charms, and semi-celestial blood, the Deva cannot help but be drawn to the priestess. They consummate the relationship. Nine months later Ardenfyr is born. Mother raises him within the church, he grows up good, charismatic, and holy. The mother dies when the kid is about 18 or so. Upon meeting her "lover" in Arcadia post-death (OF COURSE she was good enough to pass muster!), she tells him of their son. The situation in Greyhawk is fairly stable, and the Deva either wants his son closer to Cuthbert, to make a name for himself, or to be in a position to do the most good with his talents. For whichever reason, he taps his son to come to Sigil to join the Harmonium. And thus the Prime comes to Arcadia to become a Hardhead.
Also: The "gestalt class": is that only at first level? Are all subsequent levels (if so chosen) EITHER paladin OR favored soul?
Plus, I'd be glad to devote a level to a Major Celestial bloodline if you could please give me the specifics.

Background works for me. His being born on the Prime might prove disadvantageous at some point (only planar characters can see portals), but might also work out to his advantage (there's a good bit of planar magic that doesn't affect primes).
The Gestalt is a fusion of both classes -- whenever you gain a level, it would be in "Paladin-Favored Soul" instead of just one or the other. If you decide to multiclass, however, new classes are counted singly.
For example, if you went without the bloodline and stuck with your core class, the character would start at Paladin-Favored Soul 3. If you took the bloodline, you'd be Paladin-Favored Soul 2, Bloodline 1. If you decided to branch out and make the character more diversely capable, you might be Paladin-Favored Soul 1, Mage 1, Scout 1. Et cetera.
Here's the deal on the bloodline:
Buying a minor bloodline costs one level, to be paid before 12th level. An intermediate costs an additional level before 6th. A major bloodline costs still one more, paid by 3rd.
The tradeoff for these is additional racial abilities as you gain levels. A minor bloodline provides a new ability every four levels, an intermediate every two, and a major bloodline gives something new at each level. These abilities include skill bonuses, extra feats, improved ability scores, spell-like abilities, saving throw bonuses, energy resistances, affinity (bonuses to social rolls), and more.

There are no Save gains or hit point gains for the Bloodline Level, correct?
Most importantly: I didn't realize there would be benefits to being a Prime. I thought it would be a decent role playing tool to actualize my lack of Planescape knowledge in-game. Since there are actual benefits to be derived, I would be just as happy to try my hand at playing a character from the Planes (Arcadia, most likely?). I don't want to have a "leg up" on anybody!

Being a Prime is really a bit more of a disadvantage in general. Inability to see portals means you're going to have to be very careful about where you're walking.

So....
1. Is there a spell similar to "Detect Invisible" with regard to Portals? 2. Is it alright with you for me to play a clueless berk of a prime? I REALLY don't mind playing someone who has been raised on the "Planes".
and
3. Does your Dark Sun have/need a mage-type character? I am interested in the proposed Dark Sun Campaign, and seeing as how the characters in that campaign may one day find themselves "clueless" in Sigil, I would hate to play TWO primes in a setting where ONE is an exception.

1. Yes: a Mage spell called Warp Sense. As an alternative, find a planar best friend.
2. I think it's a cool concept, and have no problem with it. If you do go with it, can I give you a bogus dictionary of planar cant so you can sound like a clueless trying to fit in? I will unabashedly bribe with bonus XP.
3. Wizardly magic is a strange and rare thing on Athas. Rather than convert the rules for Defilers and Preservers, I've just opted not to use mages in the setting. The only spell-casting class is the elemental mystic, but we do happen to need one of those if you'd be interested in filling the role.

1. A planar best-friend it is, then! He'll be a six-inch high Pit Fiend with a gruff exterior but a heart of gold! And I'll cal him 'Brimmy'! Partially because he reeks of brimstone, but also because he's just brimming over with the desire to be helpful. We'll wander the Planes having adventures and solving myste.... Hunh? What were we talking about?
2. Then I'll go ahead with the "clueless" concept. And I'll use the wrong lingo with absolutley no call for bribery.
3. I'd be glad to play the elemental mystic. Is that a "divine caster" class, then?

I may very well have missed it, but what would you like done for starting gear?
Maximum HP per level, or do you want rolls?
The Spells listed under Favored soul: Are those spells known, or spells per day?
Would a Prime actually even have Honor or reputation worth listing (other than the reputation for stepping through a clearly marked portal and into the 665th layer of the abyss)?

Sorry it took so long to get back to you. Sheet looks good, here are a few answers:
For starting gear, use the 2e PHB or what's listed on this site for prices -- Ardenfyr will start with 720 GP.
Max HP for 1st level, plus your 2nd-level hit die. Put a [dice = 10] into your next post.
The Favored Soul chart is the casting slots per day. I'll give you a list of spheres to select from and we'll work out your spell repertoire soon.
As for leaping through a portal affecting reputation/honor, depends on why he did it, what happened, and who was there to see it.
